Ingredients
- 1 cup cooked brown rice
- 1 cup black beans, rinsed and drained
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup breadcrumbs
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large bowl, mash the black beans with a fork or potato masher – leave some texture.
- Add the cooked brown rice, chopped onion, and chopped bell pepper to the bowl.
- Stir in the breadcrumbs, chili powder, cumin, and garlic powder.
- Season with salt and pepper to taste.
- Mix everything together thoroughly.
- Form the mixture into 4-6 patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for 5-7 minutes per side, or until heated through and nicely browned.
Notes
- For extra flavor, add a chopped jalapeno pepper to the mixture.
- Serve on buns with your favorite toppings such as lettuce, tomato, onion, ketchup, or mayo.
- To prevent the patties from falling apart while cooking, chill the mixture for 30 minutes before forming the patties.
- Store leftover patties in an airtight container in the refrigerator for up to 3 days.
