Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 (15 ounce) can diced tomatoes and green chilies
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 package (10 ounces) tortillas
- 2 cups shredded lettuce
- 1/2 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
- Stir in taco seasoning and 1/2 cup water. Bring to a simmer and cook for 5 minutes.
- In a 9x13 inch baking dish, layer 1/3 of the tortillas. Sprinkle with 1/3 of the beef mixture, 1/3 of the black beans, and 1/4 cup of the cheese.
- Repeat layers twice more, ending with a layer of tortillas topped with remaining beef, black beans, corn, and the remaining 1 cup of cheese.
- Pour sour cream over the top.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
- Top with shredded lettuce and chopped green onions before serving.
Notes
- For a spicier casserole, add a pinch of cayenne pepper to the beef mixture.
- You can substitute ground turkey or chicken for the ground beef.
- To prevent the tortillas from getting soggy, lightly spray them with cooking spray before layering.
- This casserole is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days.
