Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 (15 ounce) can diced tomatoes and green chilies
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 package (10 ounces) tortillas
  • 2 cups shredded lettuce
  • 1/2 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in taco seasoning and 1/2 cup water. Bring to a simmer and cook for 5 minutes.
  4. In a 9x13 inch baking dish, layer 1/3 of the tortillas. Sprinkle with 1/3 of the beef mixture, 1/3 of the black beans, and 1/4 cup of the cheese.
  5. Repeat layers twice more, ending with a layer of tortillas topped with remaining beef, black beans, corn, and the remaining 1 cup of cheese.
  6. Pour sour cream over the top.
  7. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  8. Top with shredded lettuce and chopped green onions before serving.

Notes

  • For a spicier casserole, add a pinch of cayenne pepper to the beef mixture.
  • You can substitute ground turkey or chicken for the ground beef.
  • To prevent the tortillas from getting soggy, lightly spray them with cooking spray before layering.
  • This casserole is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days.
