Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook, breaking it up with a spoon, until browned.
  3. Remove sausage from skillet and set aside.
  4. Add chopped onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
  5. Add minced garlic, oregano, and red pepper flakes (if using). Cook for 1 minute more.
  6. Return sausage to the skillet.
  7. If using, pour in red wine and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  8. Season with salt and pepper to taste.
  9. Simmer for 5-10 minutes, or until flavors have melded.
  10. Garnish with fresh parsley before serving.
