Ingredients
- 1 pound Italian sausage (sweet or hot, your preference)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup dry red wine (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook, breaking it up with a spoon, until browned.
- Remove sausage from skillet and set aside.
- Add chopped onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
- Add minced garlic, oregano, and red pepper flakes (if using). Cook for 1 minute more.
- Return sausage to the skillet.
- If using, pour in red wine and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Season with salt and pepper to taste.
- Simmer for 5-10 minutes, or until flavors have melded.
- Garnish with fresh parsley before serving.
Notes
- This dish is delicious served on hoagie rolls with mozzarella cheese.
- For a sweeter flavor, add 1 tablespoon of brown sugar.
- To easily clean the skillet, line it with foil before cooking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
