Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1/4 cup salsa (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Lay a tortilla flat on a clean surface.
- Sprinkle 1/2 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese evenly over half of the tortilla.
- Fold the tortilla in half, pressing gently to seal.
- Cook in the hot skillet for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
- If desired, top with salsa before folding.
- Cut into wedges and serve immediately.
Notes
- For a crispier quesadilla, cook over medium-high heat.
- You can add other fillings like cooked chicken, black beans, or peppers.
- To prevent burning, use a non-stick skillet.
- Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
