Ingredients
- 1 pound pork tenderloin, cut into 1-inch cubes
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup broccoli florets
- 1/4 cup stir-fry sauce (store-bought or homemade)
- Cooked rice, for serving
Instructions
- In a bowl, toss the pork cubes with 1 tablespoon soy sauce and cornstarch. Let it marinate for 10-15 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated pork and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced bell peppers and onion and cook for 3-4 minutes, until slightly softened.
- Add the minced garlic and grated ginger and cook for 1 minute, until fragrant.
- Add the broccoli florets and stir-fry sauce. Cook for 2-3 minutes, until the broccoli is tender-crisp.
- Serve immediately over cooked rice.
Notes
- For a spicier stir-fry, add a pinch of red pepper flakes or a drizzle of sriracha.
- Prep your vegetables ahead of time by slicing them – this will speed up the cooking process.
- To prevent the pork from sticking, use a non-stick skillet.
- Store leftover stir-fry in an airtight container in the refrigerator for up to 3 days.
