Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute more.
  4. Add ground beef and cook, breaking it up with a spoon, until browned.
  5. Stir in diced tomatoes (with their juice), kidney beans, black beans, beef broth, chili powder, cumin, oregano, and cayenne pepper (if using).
  6. Bring to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally. The longer it simmers, the better the flavor!
  7. Season with salt and pepper to taste.
