Ingredients
- 3 cups rolled oats
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups mixed nuts and seeds (almonds, walnuts, pumpkin seeds, sunflower seeds)
- 1/2 cup dried fruit (raisins, cranberries, chopped apricots)
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, maple syrup, melted coconut oil, vanilla extract, and salt.
- Stir until well combined. Ensure all oats are coated.
- Add the mixed nuts and seeds. Stir to distribute evenly.
- Spread the granola mixture in a thin, even layer on the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant.
- Let cool completely on the baking sheet.
- Break into clusters. Store in an airtight container at room temperature.
Notes
- For larger clusters, press the granola down firmly onto the baking sheet.
- Don't overbake - granola will continue to crisp up as it cools.
- Store in an airtight container to maintain crispness. It's best enjoyed within 2-3 weeks.
- You can add spices like cinnamon, nutmeg, or ginger to customize the flavor.
