Ingredients
- 1.5 lbs Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 Lemon (zest and juice)
- 2 cloves Garlic (minced)
- 2 tablespoons Fresh Rosemary (chopped)
- 1 tablespoon Fresh Thyme (chopped)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 cup Chicken Broth
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts into 1-inch cubes.
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken and cook until browned on all sides. Do not cook through.
- Remove chicken from skillet and set aside.
- Add lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper to the skillet.
- Cook for 1 minute, stirring constantly.
- Return chicken to the skillet.
- Pour chicken broth into the skillet.
- Bring to a simmer, cover, and bake for 20-25 minutes, or until chicken is cooked through.
- Serve hot with your favorite sides.
Notes
- For best results, pound chicken breasts to an even thickness before cubing.
- You can use a citrus zester to easily remove the lemon zest.
- To prevent sticking, lightly grease the baking dish before adding the chicken.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For a richer flavor, add a tablespoon of butter to the skillet when cooking the herbs.
