Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup cold water
- 1 pound ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup finely chopped green onions
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 cup water for steaming
Instructions
- In a large bowl, whisk together the flour and salt.
- Gradually add the cold water, mixing until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, prepare the filling: In a bowl, combine the ground pork, chopped onion, minced garlic, chopped green onions, soy sauce, sesame oil, and ground ginger.
- Mix thoroughly until all ingredients are well combined.
- To assemble the dumplings, take a small amount of dough (about 1 tablespoon) and roll it into a circle.
- Place about 1 tablespoon of the pork filling in the center of each dough circle.
- Moisten the edges of the dough with water, fold the dough over to form a half-moon shape, and crimp the edges to seal.
- Bring water to a boil in a steamer.
- Arrange the dumplings in the steamer basket, making sure they are not touching.
- Steam for 12-15 minutes, or until the pork is cooked through.
Notes
- For best results, use very cold water when making the dough.
- You can freeze uncooked dumplings for later use. Spread them out on a baking sheet and freeze for about 30 minutes, then transfer them to a freezer bag.
- Steaming is the preferred method for cooking dumplings, but you can also pan-fry them after steaming for a crispy bottom.
- Use a bamboo steamer for optimal steaming, but a metal steamer will also work.
