Ingredients
- 1.5 lbs Chicken Breasts, boneless, skinless
- 1 cup All-Purpose Flour
- 2 Large Eggs, beaten
- 2 cups Breadcrumbs (Italian seasoned)
- 1/2 cup Marinara Sauce
- 1/2 cup Grated Parmesan Cheese
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 8 oz Mozzarella Cheese, shredded
- 2 tbsp Olive Oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut chicken breasts into 1-inch pieces.
- In a shallow dish, combine flour, salt, and pepper.
- In another shallow dish, whisk eggs.
- Dip each chicken piece in egg, then coat with flour mixture.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5-7 minutes per side, until golden brown and cooked through.
- Remove chicken from skillet and place in a 9x13 inch baking dish.
- Spread marinara sauce evenly over chicken.
- Sprinkle with 1/2 cup of Parmesan cheese.
- Top with shredded mozzarella cheese.
- Bake for 15-20 minutes, or until cheese is melted and bubbly.
Notes
- For extra crispy breading, you can add 1/4 cup of panko breadcrumbs to the Italian breadcrumbs.
- To prevent the breading from sticking to the pan, lightly spray the skillet with cooking spray.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a deeper flavor, add a pinch of red pepper flakes to the marinara sauce.
