Instructions
- Prepare the Steak: Slice the chicken steak against the grain to create thinner pieces. Pat dry with paper towels.
- Make the Batter: In a shallow dish, whisk together the flour, salt, pepper, garlic powder, and paprika.
- Prepare the Egg Wash: In a separate shallow dish, whisk together the milk and eggs.
- Coat the Steak: Dip each steak first into the egg wash, then dredge it thoroughly in the flour mixture, ensuring it's fully coated.
- Heat the Oil: Pour about 1/4 inch of vegetable oil into a large skillet over medium-high heat.
- Fry the Steak: Carefully place the coated steak into the hot skillet. Fry for 3-4 minutes per side, or until golden brown and cooked through (internal temperature of 165°F).
- Rest and Serve: Remove the steak from the skillet and place it on a paper towel-lined plate to drain excess oil. Serve hot with biscuits.
Notes
- For best results, let the steak sit at room temperature for 30 minutes before frying to ensure even cooking.
- Using a meat mallet to gently pound the steak to a uniform thickness will also improve the texture.
- Don't overcrowd the skillet; fry in batches to maintain oil temperature.
- To keep the steak moist, wrap it in foil while it rests.
