Ingredients
- 1 tablespoon olive oil
- 6 medium flour tortillas
- 2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet.
- Sprinkle half of the cheddar cheese and Monterey Jack cheese evenly over half of the tortilla.
- Fold the tortilla in half.
- Cook for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown.
- Repeat with the remaining tortillas and cheese.
- Cut into wedges and serve immediately.
Notes
- For a crispier quesadilla, use a cast iron skillet.
- You can add other fillings like cooked chicken, black beans, or salsa.
- Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
