Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped green onions, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more, until fragrant.
- Stir in diced tomatoes, Cajun seasoning, paprika, cayenne pepper, salt, and pepper.
- Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Add shrimp to the skillet and cook for 3-5 minutes, or until pink and cooked through.
- Garnish with chopped green onions before serving.
Notes
- For extra spice, add a pinch of red pepper flakes.
- Serve over rice, with crusty bread for dipping.
- Shrimp cooks quickly, so be careful not to overcook them.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
