Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 1/2 cup chopped bell pepper (any color)
- 1 pound breakfast sausage, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
- Add the cooked and crumbled breakfast sausage to the skillet and cook for another 3-5 minutes, stirring occasionally.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet and cook, stirring constantly, until the eggs are set but still slightly moist, about 2-3 minutes.
- Warm the flour tortillas in a dry skillet or microwave until pliable.
- Lay a tortilla flat. Spoon about 1/2 cup of the sausage and egg mixture onto the center of the tortilla.
- Top with 1/4 cup of shredded cheddar cheese.
- Fold in the sides of the tortilla and then roll up tightly.
- Repeat with the remaining tortillas and filling.
Notes
- For extra flavor, add a pinch of chili powder or cumin to the sausage.
- To prevent soggy burritos, drain any excess grease from the sausage before adding it to the skillet.
- Store leftover burritos in the refrigerator for up to 3 days. Reheat in a skillet, microwave, or oven.
- For a spicier burrito, add a pinch of cayenne pepper to the egg mixture.
