Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1/2 cup chopped onion
- 1 jalapeno, seeded and minced (optional)
- 12 corn tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- Toppings: lettuce, sour cream, guacamole
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Add the taco seasoning and water to the skillet. Bring to a simmer and cook for 5-7 minutes, or until the liquid has reduced.
- Warm the tortillas according to package instructions (microwave, dry skillet, or warm in a tortilla warmer).
- Fill each tortilla with the beef mixture, shredded cheese, salsa, and toppings.
Notes
- For a spicier taco, leave some of the jalapeno seeds in when mincing.
- To prevent the tortillas from sticking together, brush them lightly with oil before warming.
- Store leftover beef in an airtight container in the refrigerator for up to 3 days.
- To bake tacos, preheat oven to 375°F (190°C). Place filled tortillas on a baking sheet and bake for 10-15 minutes, or until heated through.
