Ingredients
- 1 tablespoon vegetable oil
- 1 pound beef, thinly sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups cooked rice, day-old preferred
- 1 cup frozen peas
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 green onions, chopped (for garnish)
Instructions
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add beef and cook until browned, about 5-7 minutes. Remove beef from wok and set aside.
- Add onion to the wok and cook until softened, about 3-5 minutes.
- Add garlic and cook for 1 minute, until fragrant.
- Add cooked rice to the wok and break it up with a spatula.
- Stir-fry for 3-5 minutes, until rice is heated through.
- Add frozen peas and cooked beef back to the wok.
- Pour in soy sauce and sesame oil. Stir-fry for 1-2 minutes until everything is well combined.
- Garnish with chopped green onions before serving.
Notes
- Day-old rice is crucial for achieving the right texture in fried rice. The drier the rice, the better it will absorb the flavors.
- A wok is ideal for this recipe, but a large skillet will also work. Using high heat helps to create a slightly charred and flavorful rice.
- Don't overcrowd the wok. Cook in batches if necessary to ensure even cooking.
- For extra flavor, add a beaten egg to the wok after the rice is added and stir-fry until cooked.
- Store leftover fried rice in an airtight container in the refrigerator for up to 3 days.
