Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can enchilada sauce
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup sour cream
- Optional toppings: salsa, guacamole, chopped cilantro
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the taco seasoning and cook for 1 minute more.
- Add the black beans and enchilada sauce to the skillet and simmer for 5 minutes, stirring occasionally.
- Warm the tortillas according to package directions (microwave, dry skillet, or warm oven).
- Fill each tortilla with the beef mixture, 2 cups of shredded cheese, and shredded lettuce.
- Fold in the sides of the tortilla and roll up tightly.
- Serve immediately with your favorite toppings.
Notes
- For extra flavor, add a pinch of chili powder or cumin to the beef mixture.
- To prevent soggy burritos, do not overfill them.
- You can prepare the beef mixture ahead of time and store it in the refrigerator for up to 3 days.
- To freeze burritos, wrap them individually in foil and freeze for up to 2 months. Reheat in the oven or microwave.
