Ingredients
- 4 (6-8 ounce) cod fillets
- 2 tablespoons olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Place cod fillets in the prepared baking dish.
- Drizzle with 1 tablespoon of olive oil.
- Top with lemon slices, minced garlic, parsley, and thyme.
- Season with salt and pepper.
- Bake for 15-20 minutes, or until fish is cooked through and flakes easily with a fork.
- Let rest for 5 minutes before serving.
Notes
- For best results, use skin-on fillets and pat them dry with paper towels before baking.
- To prevent the fish from drying out, you can cover the baking dish with foil for the first 10 minutes, then remove the foil for the remaining time.
- Serve with your favorite side dishes such as roasted vegetables or rice.
- Store leftover cod in an airtight container in the refrigerator for up to 3 days.
