Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, bell peppers, and cook for another 3-5 minutes, until slightly tender.
  4. Stir in black beans, kidney beans, diced tomatoes, tomato sauce, and vegetable broth.
  5. Add chili powder, cumin, smoked paprika, and cayenne pepper (if using).
