Ingredients
- 2 lbs Yukon Gold Potatoes, cut into 1-inch chunks
- 2 tablespoons Olive Oil

Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until golden brown and tender.
- Stir the potatoes halfway through cooking for even browning.
Notes
- For extra crispy potatoes, parboil them for 5 minutes before roasting.
- Don't overcrowd the baking sheet; use two sheets if necessary.
- To store leftovers, allow them to cool completely before transferring to an airtight container. They can be reheated in the oven or microwave.
- Using a fork to prick the potatoes before roasting helps release starch and allows for crispier skin.
