Ingredients
- 1.5 lbs Boneless, Skinless Chicken Breasts

Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts into 1-inch cubes.
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken and cook until browned on all sides (about 5-7 minutes).
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Squeeze in the juice of half a lemon.
- Season with salt, pepper, and the remaining lemon juice.
- Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through.
- Internal temperature should reach 165°F (74°C).
Notes
- For faster cooking, you can pound the chicken breasts to an even thickness.
- If you don't have fresh herbs, you can use 1 teaspoon of dried herbs.
- Serve with rice, quinoa, or roasted vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
