Ingredients
- 5 lbs Russet Potatoes, peeled and quartered
- 1/2 cup Milk
- 4 tablespoons Butter, unsalted
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- Food Coloring (Red and Orange)
- 1/2 cup Cornstarch
- 1 cup Cold Water
Instructions
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add milk, butter, salt, and pepper to the pot. Mash until smooth.
- Divide the mashed potatoes into two bowls.
- To one bowl, add red food coloring and mix until desired volcano color is achieved.
- To the other bowl, mix cornstarch with cold water to form a slurry.
- Pour cornstarch slurry into the second bowl of mashed potatoes and mix well.
- Using a spoon, create a volcano shape on a serving platter.
- Pour the red/orange mashed potatoes around the base of the volcano.
- Add the remaining mashed potatoes to the volcano top to simulate lava flow.
Notes
- For a smoother mash, use a potato ricer instead of a masher.
- Warm the milk slightly before adding to the potatoes for a creamier texture.
- Store leftover mashed potatoes in an airtight container in the refrigerator for up to 3 days. Reheat with a little milk or butter.
- To bake, preheat oven to 375°F (190°C). Bake for 15-20 minutes, or until heated through.
