Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 1 packet (1 oz) taco seasoning
- 1/2 cup chicken broth
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 12 corn tortillas
- Toppings: salsa, sour cream, guacamole
Instructions
- Cut chicken into 1-inch cubes.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through, about 6-8 minutes.
- Stir in taco seasoning and chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Warm tortillas according to package instructions.
- Fill tortillas with chicken mixture.
- Top with shredded cheese and chopped cilantro.
- Serve with your favorite toppings.
Notes
- For a spicier taco, add a pinch of cayenne pepper to the seasoning mix.
- To prevent soggy tortillas, warm them slowly over low heat.
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
