Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken breasts, olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
  3. Toss to coat the chicken evenly.
  4. Spread halved potatoes and broccoli florets in a single layer on a large sheet pan.
  5. Arrange chicken breasts amongst the potatoes and broccoli.
  6. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender. Internal temperature of chicken should reach 165°F (74°C).
