Ingredients
- 1 medium head cauliflower, cut into florets
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- Your favorite pizza toppings
Instructions
- Preheat oven to 400°F (200°C).
- Steam cauliflower florets for 8-10 minutes, until tender. Alternatively, you can roast them at 400°F (200°C) for 20-25 minutes, tossing halfway through.
- Drain cauliflower well. Wrap the cauliflower in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much moisture as possible. This is crucial for a crispy crust.
- Transfer the drained cauliflower to a large bowl.
- Add Parmesan cheese, garlic powder, salt, and pepper to the cauliflower.
- Using a food processor, pulse until the cauliflower resembles couscous. Be careful not to over-process into a puree.
- Spread the cauliflower mixture evenly onto a baking sheet lined with parchment paper.
- Using your hands or a spatula, press the mixture firmly to form a 12-inch pizza crust shape. The tighter you press, the better.
- Bake for 20-25 minutes, or until the crust is golden brown and firm.
- Remove from oven.
- Spread pizza sauce evenly over the crust.
- Sprinkle with mozzarella cheese and your desired toppings.
- Return to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before slicing and serving.
Notes
- For a crispier crust, you can bake the crust directly on a pizza stone or baking steel.
- A food processor makes this process much easier, but you can also grate the cauliflower by hand.
- Removing excess moisture is key to preventing a soggy crust. Don't skip the squeezing step!
- Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
