Ingredients

  • 2.5 lbs Pork Chops (Bone-in, about 1 inch thick)
  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Apple Cider
  • 1/4 cup Brown Sugar
  • 2 tbsp Dijon Mustard
  • 1 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season pork chops with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear pork chops for 2-3 minutes per side, until browned.
  5. Remove pork chops from skillet and set aside.
  6. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  7. Add minced garlic and cook for 1 minute more.
  8. In a small saucepan, combine apple cider, brown sugar, Dijon mustard, and dried thyme.
  9. Bring to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
  10. Place pork chops back into the skillet.
  11. Pour apple cider glaze over the pork chops.
  12. Bake for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
  13. Let rest for 5-10 minutes before serving.

Notes

  • For best results, use bone-in pork chops for added flavor.
  • To ensure even cooking, use a meat thermometer to check the internal temperature.
  • Resting the pork chops allows the juices to redistribute, resulting in a more tender and flavorful chop.
  • Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
  • Store leftover pork chops in an airtight container in the refrigerator for up to 3 days.
